Day in the life: market edition

What a banger of a day – the sun was out, live music playing, good vibes everywhere, and people soaking up the sunshine and market goodness. I love markets for that sense of community, and this one had it all: beautiful local makers, food trucks, and the best backdrop in Newy.

The food: we absolutely looove the viet lemongrass beef vermicelli salad 🥗😮‍💨 for drinks, we love the @provibe_warnersbay concoctions 🥤 they’re so refreshing!

I stopped by and couldn’t go past the pistachio cream donut – soft, fluffy, and filled with the dreamiest pistachio goodness. The boston creme was a crowd favourite as well.

🇵🇭 Filipino Camaron Rebusado 🍤 This more 🇵🇭 Filipino Camaron Rebusado 🍤

This moreish dish is the Philippines’ version of tempura, but with its own twist. Where Japanese tempura is super delicate and light, camaron rebusado has a slightly thicker, golden batter that makes each prawn extra crispy and satisfying.

The prep could not be more simple, and the secret ingredient? Beer! 🍺 It gives the batter that light crunch and subtle flavour that makes this dish so addictive. Perfect with rice, dipped in sweet-and-sour sauce, or just snacked on while they’re still hot (the way my family always did).

Brunch with my girlfriends at Light Years Newcastle felt like a little escape from the city. The art deco space on Darby Street is all high ceilings, soft pink tones, and lush greenery – so beautiful you could happily stay for hours.

We shared plates of delicious modern Asian food over cocktails and caught up on life. The pork belly bao was my favourite – sweet and tender pork, paired beautifully with a soft and chewy bao.

Dinner, anyone? Back home in the Philippines, Panc Dinner, anyone? Back home in the Philippines, Pancit Canton is the ultimate ‘any occasion’ noodle dish – birthdays, holidays, family get-togethers, you name it. Stir-fried noodles loaded with veggies, protein (I’m using chicken and prawns here), and a savoury soy-oyster sauce that ties it all together.

It’s comfort food that is also symbolic of a Filipino celebration 🇵🇭 And the best part is that It’s quick, hearty, and uses a lot of ingredients you might already have in your fridge (although a trip to your local Asian store might be needed!).
