When I was working a full-time corporate office job, I would often drink around ten cups of coffee each day. Whenever the afternoon slump hit, I sought a quick caffeine boost to fend off the sleepiness and – shocker – boredom.
I loved coffee then, and I still do, but I soon noticed how much caffeine was affecting my anxiety. After experiencing heart palpitations and being told they were due to my excessive coffee intake, I decided to give up coffee for a while.
Now that I’m older, even though I still enjoy my coffee and its scent wafting in the air every morning, I make sure I only have one cup a day. Frankly, I don’t want to risk getting anxiety and heart palpitations for a second cup of coffee. Hard as it may seem, I tried my best to stick to one cup but I still had that nagging feeling every afternoon – I still needed an energy booster! I needed something that would give me a steady energy boost, and it needed to be as delicious as my morning cup of joe.
Iced Coconut Milk Matcha Latte
Enter my matcha era. Between all its known health benefits, the tiktoks made about it – Starbucks Iced Matcha Green Tea latte anyone? – and all the girlies drinking matcha latte, I couldn’t escape the madness! I know, I know – this isn’t a novel concept, but the recent surge in matcha making certainly piqued my curiosity. I wonder how this drink will fare compared to my coffee? But most importantly, I wonder if it’s any good post 12 noon?
I tried it for a week, and turns out, it’s actually so good for me! Not only is it healthy, but it did wonders to my sustained energy levels throughout the afternoon. I love it so much so that I’ve tweaked the normal recipe and turned it into my own – this is exactly how I drink mine and I can’t wait to share it with you!
Ingredients
This is a dairy-free recipe and I use my trusty Vitasoy Oat Milk. It’s seriously one of the creamiest (and cheapest) oat milks out there. Let’s get to it!
- Milk: You can use dairy or dairy-free milk, including oat milk, soy milk, or almond milk, mac milk, etc. There should be a “milky” or “barista” option in the plant-based varieties, which ultimately makes it creamier than its regular counterpart. You can choose this one if you want a creamy drink.
- Coconut milk: This is the star of the drink – it lends such a sweet and tropical taste to an otherwise very earthy drink.
- Matcha powder: The main character of our recipe! I use this brand.
- Brown sugar: Brown sugar is such a party trick for me and I want everyone to know about its amazing flavours in drinks. Brown sugar lends a butter, caramelly taste to this matcha, further elevating its already rich and yummy flavour profile.
- Stevia: I add a bit of stevia to make it a tad bit more sweet. You can opt out of this one if this doesn’t suit you.
How to make a delicious iced coconut matcha latte
- 1 cup plant-based milk
- 1/2 cup coconut milk
- 2g matcha powder
- 2 tbsps hot water to dissolve
- 1 tbsp brown sugar
- 2 tsp stevia
- Ice
